Buckwheat Noodles
Buckwheat is uniquely rich in protein and the essential amino acid lysine, which is lacking in most grains. It is also rich in rutin, a vitamin known for its beneficial effect on the heart and blood circulation. Buckwheat is gluten free and suitable for wheat free diets. It is also a low glycemic index (GI) food and is ideal for diabetes.
Boiled the noodle for 3-5 mins. Once noodle is cooked, drain off excess water and set aside. It can be cooked as dry noodle, cold noodle or noodle soup.
